House of Fermentation
Dear Customers, With a heavy heart, we must announce abrupt pause in my kimchi-making business at this location. For the past five years, we have been entangled in a legal dispute with our landlord regarding our tenancy at Witte De Withstraat 148H, Amsterdam. While the initial court ruling was in our favor, the High Court overturned that decision on March 21st, 2025. We were initially granted three months to arrange payments and vacate the space. However, on March 26th, the landlord’s legal team escalated matters by demanding an immediate payment in legal fees, due the very next day, with clear intent to pursue further aggressive collection measures. The nature and urgency of these demands, combined with the absence of any remaining legal or institutional protections, created an environment of immense pressure and intimidation. Faced with the real risk of escalating confrontations, we made the painful yet necessary decision to vacate immediately in order to protect ourselves and preserve the spirit of House of Fermentation. This is not the transition I had hoped for, and it deeply saddens me that I cannot offer a smoother path forward at this time. In the coming months, my focus will be on healing, regaining stability, and reimagining the future—both for House of Fermentation and myself. Despite the challenges we have faced, your enthusiasm for my kimchi and workshops has been more than just motivation—it has been a source of strength and protection. Knowing that you valued and believed in my work gave me the courage to stand firm in the face of ongoing intimidation and threats from the landlord outside of the courtroom. Your support created a safe space for me, a community that shielded me from the hostility surrounding this dispute, and for that, I am endlessly grateful. This is not goodbye—just a long pause. I look forward to reconnecting in the future. With appreciation and resilience, HoF & Mina
